DINNER OUT... AT HOME

MAKE DINNER FUN AGAIN!

This year we’ve all been home more than we’re used to, maybe more than we’d like! And whether it’s families with children or empty-nesting couples, the struggle is real to keep dinner fun, interesting, and healthy (maybe). Not to mention more cooking at home usually means more kitchen clean up and can send us all running for the pizza delivery number! But we’ve got a game plan for dinner on the Kettle that checks all the boxes for a delicious meal at home.

Join us kettle-side as we walk through cooking a full meal on the Kettle!

HERE'S WHAT WE USED:

  • Firewood (see The Perfect Fire)
  • Cooking Accessories - we used the Grill, Side Kick, Heat Dome, and Roasting Forks
  • Meat Thermometer
  • Food, Spices, Garnishes...
  • Grilling tools, aluminum foil
  • Cast Iron Skillet
  • Prep space by the Kettle

TIPS TO START:

*Decide on your serving time and back up cooking times and fire prep from there. Start the fire at least an hour prior to cooking.

*Prep your food while the fire is developing a nice bed of coals. We rubbed the potatoes with olive oil & salt and wrapped in foil. Fish and fowl were seasoned, veggies cut, and garnishes gathered. 

 

*Wrapped potatoes were placed directly in the coals and rotated - allow 50-60 minutes. Other items were timed from there. And even if your timing isn't perfect, most foods are forgiving if wrapped and resting.

*We added bone-in chicken thighs and used the heat dome to capture the juices and roll smoke flavor over the top.

*Later the fish was added on grilling planks and asparagus to a skillet on the Side Kick. 

 

*Just before serving, we grilled the avocados & lemons, and toasted garlic bread on the Grill.

*While this is a fairly elaborate meal-in-a-kettle, we recommend starting simple and adding new recipes as you become more experienced with timing and creating temperature zones.

 

IT'S NOT OVER YET...

Dinner out isn’t complete without dessert! 

 

Fruit, marshmallows and cake all toast nicely on the Roasting Forks. And kicking back with your feet on the boot rail is a beautiful way to end the evening.
