BBQ Butter Chargrilled Oysters

An open fire beef stew recipe featuring fork-tender chunks of beef, hearty vegetables, and a rich, deeply savory gravy that makes a perfect cold-weather meal.

Serves 2-4

INGREDIENTS 

BBQ Butter 

½ lb unsalted butter

1 Tbsp garlic, minced

1 tsp dried rosemary

1 tsp dried oregano

1 tsp Jay D’s Spicy & Sweet BBQ Rub

¼ cup Jay D’s Louisiana Barbecue Sauce

Oysters

1 cup Gulf oysters

½ cup BBQ Butter

Green onion, sliced thin

1 lemon

Crusty grilled bread

 

INSTRUCTIONS

Heat skillet over medium heat. Place butter in a skillet and let it melt.

Add garlic, rosemary, and oregano and cook for 2-3 minutes and the garlic is soft.

Add BBQ rub and sauce and cook for an additional 2 minutes. Reserve.

Heat an Oyster Bed over high heat on a grill. 

Arrange oysters evenly throughout the wells. Spoon BBQ Butter in each well over the oysters and let it sizzle. Smell the goodness as it cooks for a few minutes. 

Sprinkle green onions over all the wells as it cooks.

Remove from heat, squeeze lemon juice over the whole thing, serve with crusty French bread.
