Cobbler cooked over the coals in a cast iron skillet takes on a whole new level of deliciousness. The lemon zest adds an element of brightness so don't skip that step!

Blackberry Cobbler with Ice Cream
INGREDIENTS
1 cup flour
1 cup white sugar
½ teaspoon cinnamon
1 stick (1/2 cup) salted butter
Lemon juice and zest
4 cups blackberries
Serve with ice cream
DIRECTIONS
Set up a Sea Island Forge Kettle for medium heat cooking. This will consist of a nice coal bed made with charcoal or natural wood without much of a fire still burning. Use the Sea Island Forge Grill and Heat Dome.
In a medium bowl, combine flour, sugar, and cinnamon and stir. Over the white-hot coals the Kettle on the Grill, melt butter in a 9-inch cast iron skillet. Once melted, carefully pour melted butter into the bowl with flour mixture, and stir until incorporated. Spread berries into an even layer on the bottom of the cast iron skillet, then spread the butter-flour mixture over the top.
Return the skillet to the Grill over the fire, cover with the Heat Dome, and cook for 30-45 minutes, until the berries are cooked and bubbling and the topping is golden brown. Make sure to keep an eye on the coal bed and adjust the coals and the Grill as necessary to keep the heat even. Serve immediately with ice cream.
