Grilled Pineapple with crispy buttermilk waffles

This dish pairs sweet thick slices of grilled pineapple with fresh yeasted waffles. It can be paired with whipped cream or served a la mode with vanilla ice cream to finish the dish.
Ingredients
2 cups flour
- 1 ½ teaspoons yeast
- ½ c melted butter
- 2 cups buttermilk
- 2 eggs
- 2 teaspoons vanilla extract
- 1 tablespoon coconut sugar
- ½ teaspoon salt
- 1 whole pineapple – as ripe as possible
- ¾ cup coconut sugar
Directions
Day before making waffles:
- Combine all ingredients in the bowl of a stand mixer and whisk until fully combined about 3 minutes.
- Cover with plastic wrap or rest a plate on top of the bowl to cover and put in the fridge until the next day.
- To make waffles:
- Prepare your waffle iron as usual. Stir the batter to lightly deflate it and cook in the waffle iron.
Cut the skin off the pineapple and cut into 6 thick slices. Place 1 tablespoon of coconut sugar on each side of each pineapple slice and place slices in a large bowl. Let rest for 10 minutes. You can also complete this step the day before you are grilling and store the slices in the fridge overnight.
- Prepare a low temp grill and warm up your grill. Lay the pineapple slices in one layer on the grill and lift the grill as high as possible off the heat. The pineapple can char easily as it’s naturally sweet and has the sugar marinade on the surface.
- Cover the grill with the heat dome and grill on the first side for 15-20 minutes, check the slices after 5 minutes and lower the grill one or two notches if the fruit is not browning. Flip the fruit once it is browned and slices have become flexible as the fruit breaks down in the heat. Cover again with the heat dome and cook for another 15-20 minutes on the other side. Remove from the grill.
- While the pineapple is grilling, cook the waffles or thaw and toast pre-made waffles.
- Serve the dish by combining a whole waffle with a slice of grilled pineapple and top with fresh or prepared sweetened whipped cream or with a scoop of vanilla ice cream.
